One Pot Salsa Verde Chicken Pasta
Seasoned chicken, penne pasta and Monterey Jack cheese cooked in a creamy green chile sauce. It's a delicious quick and easy one pot dinner that's ready in 30 minutes!

Ingredients

olive oil
1 ½

boneless skinless chicken breasts

teaspoon
ground cumin

teaspoon
sea salt

teaspoon
garlic powder

teaspoon
black pepper

mini penne pasta

water

cup
salsa verde
½
cup
cream

cup
Monterey Jack cheese
Instructions
In a large skillet, heat the olive oil, add the chicken, and season with cumin, sea salt, pepper and garlic
Cook chicken over medium high heat until slightly brown
Add the pasta, water and salsa verde, cover and cook over high heat, stirring occasionally, for about 10 minutes or until penne is al dente
Reduce heat to medium low, and stir in the cream and monterey jack cheese
Top with additional cheese and tomatoes and chopped cilantro, if desired
Notes
For a spicier dinner, use pepper jack cheese or a combination of pepper and monterey jack cheeses
